Wow, about a month to go before I am the BIG 3-0! I have never been a party person so I don’t think I will celebrate my birthday by throwing a big party or having a get-together. Wow, I missed a few days here! Honestly, I have been just exhausted and trying to adjust to a new schedule. The most exciting thing that happened in the last few days was that I started working on the farm: Vermont Valley Community Farm. Let me tell you, farm work is no joke! I’m summing up this day with two thoughts:
- I’m sore from the butt down!
and
- I need more vegetables!
My soreness issue probably won’t go away anytime soon, so I’m just going to try to drink (water, to flush out toxins), keep active (it actually feels better when I am moving about–its just the initial hurt of getting up that’s hard!), and sleep it off! Today, instead of running the one mile for the Runner’s World Challenge, I walked 3 miles. I’m not being too hard on myself, especially since in Bootcamp this morning we did a lot of leg exercises. I’m not trying to overdo it!
As far as my vegetable situation, I’ve been trying to eat up all the veggies I currently have in the house to be ready for the fresh veggies I will receive on Friday! All that was left in the house today was cauliflower and I thought, what am I going to do with that? I didn’t want cauliflower rice or mashed cauliflower. Then, I remembered seeing a recipe online for curried roasted cauliflower! I made some to go with my blackened tilapia and it was GREAT!

- Runner’s world summer run challenge–one mile a day until July 4 (started yesterday)
- My 30th birthday: July 4th!
36 more days and miles until my birthday!
Today, I went to boot camp, where we focused on legs (squats, lunges, step ups, etc)…wow, so I felt the run today. I ended doing a practice run to the gym, which is 1.05 miles away from where I live. I must say, those last .2 miles were an uphill doosy–I did more of a powerwalk then run! LOL
Since the run there was the one mile, I just had a nice leisurely walk back.
Today, my food intake was ok–I had two protein shakes. Usually, just want to have only one. Need to go grocery shopping…LOL
Here’s a recap of my day:
- 5:30 am Bootcamp (focus on legs/cardio)
- 7:00am Meal 1: Post workout protein shake–20g chocolate protein powder, 1/2 cup frozen strawberries, 1 cup 1% milk
- 10:00am Meal 2–veggie breakfast burrito with 1 egg + 1 egg white, 1/2 slice swiss cheese, green peppers, red peppers, onion, low carb tortilla (10g carbs), dash of hot sauce
- 2:00pm Meal 3–Fat Free Greek Yogurt (6oz), 1/2 cup strawberries
- 5:00pm evening run/walk
- 6:00pm Meal 4–Chocolate protein shake with just protein and 6oz 1% milk
- 8:00pm Meal 5–Chicken stirfry with green peppers, red peppers, broccoli, onion, spicy sezchuan sauce, 1/2 cup brown rice
- 104 oz h2o
If you run, you are a runner…
Tomorrow starts a new exercise program (basically a boot camp style program–but indoors all summer!) at a gym near my house. It’s a structured 12 week program and I joined it because I want to go on auto-pilot with my exercise this summer! I work better this way.
But, in addition to the new exercise program I am starting, I am also going to do Runner’s World Running Streak 2012: Run 1 mile everyday from Memorial Day until July 4 (my birthday). That’s 38 consecutive days of running. 7 miles a week.
Good thing it stopped raining…going out now!
When I don’t write….
It has been ten days since I posted my last blog post and I must say that in those ten days my life has changed drastically!
I applied for, interviewed, was offered and accepted a new summer job. I moved to a new state. Started said new job. Began CrossFit!!!!
Totally fell off my Paleo eating plan. Re-joined FaceBook.
In the midst of it all, the AC adapter to my computer shorted so I have been without my computer for the last week or so because I haven’t been able to charge it. A lot is going on, to say the least!
Throughout it all, I have missed my blog. I have been really stressed out, work wise, and I have totally realized, now more than ever, that writing is not only my release, but also a source of accountability for me.
Because my summer job involves me living in the residence halls at the UW-Madison, my eating as of late has been HORRIBLE! I have decided that I will do Paleo to the best of my ability, but with some tweaks. I am also going to re-incorporate my protein shakes. Meal options are not bad, but it’s hard to eat well when you can’t really control what options you have. So, I am going to do the best I can this summer by controlling what I can.
All in all, though the past week has been super busy and super stressful at times, I can say I am happy with where I am. Also, I’m SUPER excited to be starting CrossFit.

This week I am in Madison–I have a few appointments and I am gathering a little research in the archives for the current chapter I am working on. While I am here, I am keeping up my exercise and eating my favorite paleo-friendly foods! For the third time in two weeks, I made Jicama Slaw! LOL It is so yummy. This time I added green and red peppers to this festival of flavors! I am also getting really good at roasting chicken. For some reason the thought of roasting an entire of chicken scared me a little bit. Now, its no biggie. And, each time I make one, it gets better and better! Yesterday, I seasoned the chicken with garlic powder, pepper, and a little natural sea salt. I popped it in the oven at 400 degrees for about 1 hour. This yielded a really juicy, flavorful chicken. So, for the next couple of days, I will be eating my roast chicken and jicama slaw! Continue reading
Exactly ONE MONTH until I’m 29!!!!
My birthday is July 4th and I’m actually a little excited this year.
Last year, I honestly DREADED my 28th birthday. I was having an early, “I’m going to be 30 and I feel so un-accomplished” moment. This year, I still feel rather unaccomplished, or should I say “almost finished” (and not “in-complete”) in some areas, but I am not letting those feelings preoccupy my mind and ruin my celebration!
Also, June is the half-year mark. So many of us decided on New Year’s resolution or set new goals in January, what came of them? I stopped setting New Year’s resolutions a couple of years ago, feeling that I didn’t need a new year to make goals and work toward them. As I near my 29th birthday, I do have some goals to reach before the BIG 3-0!!!! Continue reading
Good Morning, Sunshine!

It’s such a beautiful day! And, I started it out by going to my favorite kettlebell muscle power class (my arms are now JELLY) and making an omelet “pizza” with eggs, sauteed kale, red and green peppers, and green onions. [Sauteed veggies in coconut oil until soft in cast iron skillet. Poured 4 eggs over of the veggies. Cooked until bottom was set. Finished in a 400 degree oven until top was set. Bon Appetit! I had half for breakfast, will eat the remainder later.] Good morning all around.
I started a new chapter (yippee), but its so hard to concentrate when this is your view (see pic above) and when the breeze just floats in and caresses you oh so gently! LOL, plus, I’m grooving HARD to my “Ledisi” radio station on PandoraOne. I’m being spoiled with Stevie Wonder, Ledisi, The Rippingtons, Kindred The Family Soul, Bilal, Sade, The Fugees, Goapele—all my favorites!
Ok, back to work! Gotta make this day count!
